Pickled Red Onions
These pickled red onions are delicious. They are great on salads and tacos, or just by themselves. This recipe makes 1 large mouth mason jar.
1 large red onion, sliced thinly
1 clove garlic
1 cup white vinegar
1 cup water
2 tbsp white sugar
2 tbsp salt
1 tsp pickling spices* (see note below)
Pinch ground black pepper

Thinly slice the red onion and peel the garlic. Place the garlic at the bottom of a large mouth mason jar. Pack the onion tightly on top of the garlic.

Add the water, vinegar, sugar, salt, pepper, and pickling spices to a small sauce pot. Stir until the sugar and salt are dissolved. Place a lid on the pot and bring the mixture up to a boil over medium-high heat.
Pour the boiling vinegar solution over the sliced onion and garlic. Press the onion down so all the pieces are submerged, then let the mixture cool to room temperature. Store the jar in the refrigerator. The onions will be ready in 2 days and should be used within 1-2 months.
*Pickling spice contains: coriander, cumin, ginger, allspice, cinnamon, bay leaf, yellow mustard, cloves, and turmeric
